LE BAL Café serves dishes with a distinctly British flavour made from fresh, seasonal ingredients created by chefs Alice Quillet and Anna Trattles.

THE TEAM

Anna Trattles and Alice Quillet met in Paris in 2003 where they both worked in the Rose Bakery kitchen. In 2007, Anna joined the brigade at the prestigious St. John Bread and Wine restaurant in London. It was there that she discovered a passion for cooking meat and offal. After leaving Rose Bakery, Alice began a career in journalism, working for the International Herald Tribune and Monocle magazine’s Americas bureau. After two years in New York, she came back to Paris where she donned her chef’s hat again.


Born to French and Irish parents, Anselme Blayney also met Alice and Anna at Rose Bakery, where he worked as a waiter. After studying business, he left for New York and spent two years working for a Languedoc winery. His passion for wine brought him back to Paris and a job at Willi’s Wine Bar while giving classes in wine-tasting.
